The one (of many) things that no one warns you about adulthood is that you have to make dinner every single night. Let’s be honest, some nights you just do not have the energy, and that’s where these delicious airfryer mince enchiladas come in.
They can be made with leftovers, have minimal prep, and cook to perfection in under ten minutes, what’s not to love about that?!

A few reasons why airfryer mince enchiladas might be my new favorite recipe:
- You can use leftovers to make it. We always seem to have leftover bolognese when we make spag bol, this is a great way to use it. But don’t limit it to mince, you could use shredded chicken or even veggies.
- There isn’t a lot of prep at all, literally just plonk onto a wrap, roll it up, and cook.
- It takes less than ten minutes to cook, what an actual lifesaver.
- You can sneak extra protein and veg in so easily. Add in some black beans for an extra protein kick, or make a pasta sauce out of roasted and then blitzed veggies
If you don’t have an airfryer, you can definitely use your oven, it might just take a little longer, but still be as delicious!


Airfryer Mince Enchiladas Recipe
Ingredients:
- Mince (or left over bolognaise)
- Taco seasoning (I use this one from Woolworths)
- Bolognaise sauce (this is our go to)
- Wraps (I like these mini ones)
- Cheese
- Pizza sauce
- Preferred sides, we have ours with corn and smashed avo
Method:
1. Brown your mince and add in your taco seasoning.
2. Once browned, add your bolognese sauce and let it simmer for 7-10 minutes
3. Lay out your wraps and add cheese to them, less is more.
4. Once the mince is cooked, add a spoonful to each wrap as well. Make sure not to overfill them.
5. Roll your wraps up, make sure you tuck in the corners so that they don’t leak when cooking.
6. Top with pizza sauce and then more cheese.
7. Pop them into your airfryer on 180C for between 7-9 minutes.
8. Serve with your favorite sides and enjoy!
