Quick and Easy lunchbox snack: Pizza roll-ups

If there’s one thing we go through at warp speed in this house, it’s snacks… and these pizza roll-ups are a current favourite, plus they work well as an easy lunchbox snack too. Win win.

Between the girls’ lunchboxes, constant snacking after school and Dan and I both working from home, the amount of snacks we go through is pretty insane, which can get expensive really quickly.

I’m sure most of you have seen variations of pizza roll ups online but I wanted to share it on my platforms as well just in case you hadn’t because honestly, these are an absolute crowd-pleaser.

They’re easy to make, take almost no time and they’re also a good way to use up bits and pieces left over in your fridge such as veggies and cold meats. I usually make savoury pizza roll-ups, but you can absolutely make sweet ones too.

Here are a few of my favourite variations:

Ham and cheese

Camembert cheese and fig preserve

Mince and cheese (I use leftover spag bol)

Cinnamon and sugar butter

Apricot jam and crushed almonds

Chocolate spread and crushed cashews

Easy Lunchbox Snack: Pizza Roll Ups

Course Snack

Ingredients
  

  • 1 roll Puff Pastry
  • 1 tub tomato puree OR homemade pasta sauce with left over veggies
  • Toppings(I used grated mozzarella cheese and sliced ham)

Instructions
 

  • Roll or stretch out your roll of puff pastry a little and then add your tomato puree and spread.
  • If you want to use up some left over veg and make a homemade pasta sauce, simply chop up your veg and roast them until they are soft. Pop them into a blender with a blob of tomato puree and blend until smooth. Your kids will be none the wiser!
  • Add your toppings, I’m fairly generous to be honest, there’s nothing better than asuper cheesey pizza roll up.
  • Once you’ve added all of your toppings, gently roll up your puff pastry. I prefer to roll from the long way up, you tend to get more out this way and because they’re slightly smaller, they cook faster.
  • Afterrolling up your pastry, use a sharp knife and slice it up, they should be about3cm in width.
  • Pop them onto a greased baking sheet and pop into the oven or airfryer. I use myairfry er and do 8min a side.
  • Let themcool and then enjoy!

Pro tip: make double the batch and freeze some.
