Easy Lunchbox Snack: Pizza Roll Ups

Ingredients
  

  • 1 roll Puff Pastry
  • 1 tub tomato puree OR homemade pasta sauce with left over veggies
  • Toppings(I used grated mozzarella cheese and sliced ham)

Method
 

  1. Roll or stretch out your roll of puff pastry a little and then add your tomato puree and spread.
  2. If you want to use up some left over veg and make a homemade pasta sauce, simply chop up your veg and roast them until they are soft. Pop them into a blender with a blob of tomato puree and blend until smooth. Your kids will be none the wiser!
  3. Add your toppings, I’m fairly generous to be honest, there’s nothing better than asuper cheesey pizza roll up.
  4. Once you’ve added all of your toppings, gently roll up your puff pastry. I prefer to roll from the long way up, you tend to get more out this way and because they’re slightly smaller, they cook faster.
  5. Afterrolling up your pastry, use a sharp knife and slice it up, they should be about3cm in width.
  6. Pop them onto a greased baking sheet and pop into the oven or airfryer. I use myairfry er and do 8min a side.
  7. Let themcool and then enjoy!
