Easter Bunny Cupcakes

Super easy, super cute Easter cupcakes that will keep the kids occupied for thirty minutes and make a perfect Easter gift? Yes please! Here is how to make these Easter bunny cupcakes.

First things first, whip up some cupcake batter. I’m not going to pretend here, I used a premix, it makes life so much easier! Scoop some batter into your cupcake holders (only about three-quarters full) and pop them into the oven.

While your cupcakes are baking, start creating your bunny ears. Cut white marshmallows diagonally with scissors. Once you have done this, take some pink food coloring and paint the inside of the ears. I used a tiny paintbrush to do this.

Your cupcakes should be almost done in the oven by now, once they are, place them on a cooling rack. While you wait for them to cool down, mix up some icing sugar in one bowl and pour some shredded coconut in another.

When your cupcakes have completely cooled, you can begin to ice them. Put a decent layer of icing sugar on and then sprinkle with the shredded coconut to give your cupcakes a furry bunny look.

Then, take a set of marshmallow ears, and glue them to the top of your cupcake with a little bit of icing sugar.

And there you have it, really yummy Easter bunny cupcakes!
